Feijoa Cordial
The feijoa season can be abundant, but quick - blink and you’ll miss it! This feijoa cordial recipe is a great way to use plenty of ripe feijoas in one hit while impressing your guests with a unique, tasty beverage.
Ingredients
3 cups feijoa pulp
3 cups water
3 cups sugar
3 tbsp lemon juice
3 tsp citric acid
3 tsp tartaric acid
Method
1. For fresh feijoas, scoop out the pulp and place them in a pan to bring to the boil. This helps to soften them for processing. Keep a watchful eye and stir regularly to prevent them from sticking.
2. Blitz the softened feijoas in a food processor.
3. Once your feijoas are processed, combine all the ingredients in a large saucepan and heat to a simmer, again keeping a watchful eye and stirring regularly to prevent sticking.
4. Pour the contents of the saucepan into a sieve to strain the liquid. Let cool.
5. To store, seal the cordial in sterilized bottles and refrigerate.
To serve, dilute the cordial with water or soda to your taste. You can be as imaginative as you like with your feijoa cordial - it would work great as a fresh summery cocktail or mocktail with fresh feijoa chunks to garnish.
