Stuffed jacket potatoes


Two cultivars of potatoes grown in northern Illinois on display at farmers market

Approx cooking time: 13-16 min plus standing.


1 medium potato, washed and dried
1/4 cup grated cheddar cheese
1/4 tablespoon tomato paste
1/4 tablespoon Worcestershire sauce
3.5g butter
Salt and pepper
Chopped parsley, to garnish


1. Place the potato on a paper towel, prick and cook for 6 minutes.

2. Turn the potato over and turn the paper towel round.
Cook for a further 4-7 minutes.

3. Wrap potato tightly in foil and leave to stand for 5 minutes.

4. Cut a slice off a long side of the potato. Scoop out the flesh,
leaving the potato shell intact.

5. Mix the potato flesh with the cheese, tomato paste, Worcestershire sauce,
butter, salt and pepper.

6.Pile the mixture back into the potato jacket and reheat for 3 minutes.
Serve sprinkled with parsley.
