Spinach ricotta lasagne in a mug

If you have a mug and a microwave, you can enjoy this fresh spinach and ricotta lasagne dish for one. It’s a comforting choice for those days when you need a food-hug.


1/2 fresh lasagne sheet
2 1/2 cups baby spinach, roughly chopped
1/4 medium yellow capsicum, diced
1/4 cup part-skim ricotta cheese
1/4 tsp salt
1/8 tsp granulated garlic (or garlic powder)
6 tbsp pasta sauce (or tomato sauce)
1/3 cup part-skim mozzarella, grated
3 large basil leaves, finely chopped (optional)



1. Cut the lasagne sheet into quarters. Place the sheets into a bowl and cover with boiling water. Set aside.

2. Place the spinach in a bowl, top with a perforated cover, and microwave on high for 1 minute.

3. Take the spinach out, drain and let it cool, then add the capsicum, ricotta, salt, and garlic then set this mixture aside.

4. Spoon 2 tbsp of pasta sauce on the bottom of the mug and layer a piece of softened lasagne sheet. Top with some spinach mixture, then 2 tbsp mozzarella, and another pasta sheet. Continue layering and finish with a pasta sheet on top. Sprinkle the sheet with mozzarella.

5. Microwave for 1 minute 30 seconds until the mozzarella melts. Important: All microwaves are different, so cooking times may vary. Continue in 15 second intervals until fully melted.

Be sure to dig into this dish immediately for the ultimate comfort food experience. It pairs well with a red wine and great book.
