Spiced lentils in a mug

Zesty tomatoes, chillies, and warm spices are the stars of this lively vegetarian mug recipe while a trio of toppings bring added wow factor. This meal is adaptable to suit vegan diets and can be bulked up with a side dish of naan bread.


3/4 cup canned lentils, drained and rinsed (alternatives: back or pinto beans)
1/2 tsp ground cumin
1/2 can diced tomatoes with green chilis
1/8 tsp hot pepper sauce
1/4 tsp ground ginger
1 tbsp plain Greek yogurt (vegan alternative: non-dairy yogurt)
1 tbsp roasted, salted almonds, chopped
2 tsp fresh mint, chopped (alternative: parsley, cilantro, or chives)
Warm naan, to serve (optional)



1. Combine the lentils, cumin, tomatoes, hot pepper sauce, and ginger in a large mug.

2. Microwave for 90-120 seconds or until hot. Important: All microwaves are different, so cooking times may vary.

3. Top with the yogurt and sprinkle the almonds and mint on top. Serve with warm naan.

All you need now is a cold drink to enjoy with this spicy treat for one. The dish is best enjoyed as a peaceful late dinner under the setting summer sun.
