Spinach & cheddar quiche in a mug

Savour the taste of a freshly made quiche with minimal effort. This recipe is ready in an instant, making it ideal for a quick lunch or easy dinner after a long day. Particularly enjoy this one in winter, it epitomizes the concept of real food – fast.


1/2 cup packed fresh spinach
2 tbsp water
1 egg
1/3 cup milk
1/3 cup shredded cheddar cheese
salt and pepper, to taste
1 slice cooked bacon, chopped (optional)



1. Add the spinach to a large mug with 2 tbsp of water. Cover with a paper towel and microwave for one minute. Drain the liquid.

2. Add the egg to the mug with the spinach, milk, cheese, bacon, salt and pepper. Mix all ingredients until thoroughly combined.

3. Cover with a paper towel and microwave on high for 3 minutes. Important: All microwaves are different, so cooking times may vary. The egg should be solid – if it is watery, continue cooking.
