Soup in a mug

Chilly weather is the perfect excuse to stay indoors and make this soup in a mug. The ingredients list is customisable – add mushrooms, onions, and other vegetables that take your fancy. 

On top of being a scrumptious meal this soup is packed full of immunity-boosting vegetables and stock.

INGREDIENTS

1 carrot, chopped
1 stalk celery, chopped
1 tbsp beef or chicken stock (organic homemade stock is best)
1 egg
Water
1 jalapeno pepper, chopped (optional)

 

Method

1. Add the carrot, celery, jalapeno peppers, and the stock to a large mug. Leave 3cm of space at the top of the mug.

2. Cover the vegetables with water.

3. Microwave on high for 3-4 minutes. Important: All microwaves are different, so cooking times may vary. Watch the soup doesn't boil over.

4. Add the egg to the mug and stir gently making sure that you break the yolk.

5. Microwave on high again for 1-2 minutes. Important: All microwaves are different, so cooking times may vary. Ensure that the egg has cooked before serving.

How delicious does that smell? Serve with buttered toast for a beautiful, nutritious winter dish. Remember to mix this up with your favourite vegetables to keep the dish fresh every time you make it.
