Red Velvet Cake in a Mug

Next time there is a birthday in your household, this recipe is sure to be a winner. A decadent treat, it is best enjoyed after a special dinner. 

Exhibiting the classic shade of red velvet and topped with cream cheese frosting, this cake in a mug is somehow both dense and spongy. Enjoy!

4 tbsp all-purpose flour
4 1/2 tbsp white sugar
1/8 tsp baking powder
1 1/2 tbsp unsweetened cocoa powder
3 tbsp oil
3 tbsp buttermilk
1 egg
1/2 tsp red food colouring

2 tbsp cream cheese
2 tbsp butter
1/2 cup sugar

1. Whisk all the cake ingredients together in a large mug until the batter is smooth.
2. Microwave on high for 90-120 seconds. Important: All microwaves are different,    so cooking times may vary. If overcooked, the batter will become dense and            rubbery, so be careful to avoid this.
3. Leave the cake to cool slightly before frosting.
4. Blend the frosting ingredients in a bowl on high speed until light and fluffy, then spoon or pipe on top of the cake.

Red velvet cake in a mug is perfect for a relaxed birthday celebration. Add a candle and craft some miniature mug bunting to finish the scene. And if there are no birthdays on the horizon, it will brighten any evening in.
