Peanut butter and Oatmeal cake in a mug

Sweet and salty, this cake in a mug tastes suspiciously like peanut butter on toast. With an ingredient list featuring pantry staples, it’s perfect for an impromptu pick-me-up or breakfast treat with a cup of tea.

Ingredients

This recipe serves two, but feel free to halve the ingredients for a smaller portion.

• 2 tbsp vegetable oil
• 6 tbsp full cream milk
• 2 tbsp white sugar
• 6 tbsp all-purpose flour
• 3 tbsp rolled oats (a rapid-cook variety)
• 1/4 tsp salt
• 1/2 tsp baking powder
• 3 tbsp peanut butter

Instructions

1. Add the vegetable oil, milk, and sugar to a large mug and whisk to combine.
2. Add the flour and whisk until smooth.
3. Add the oats, salt, and baking powder. Mix until well combined.
4. Push 2 tbsp of the peanut butter slightly into the batter.
5. Microwave on high for 30 seconds, then 15-second bursts until the top of the cake looks dry and springs back when pressed. It may take a total of 90 seconds to cook. Important: All microwaves are different, so cooking times may vary.
6. Top with the remaining peanut butter and leave to cool for at least 5 minutes before eating.
