Carrot Cake in a Mug

The nutty, homely flavours of this cake make it perfect for morning tea on a brisk autumn day. Watch the leaves fall outside as you dig into this warm, comforting mugful of carrot cake.

Ingredients

  • 2 tbsp vegetable oil
  • 1 tbsp milk
  • 1 egg
  • 3 tbsp light brown sugar
  • 1 tsp vanilla
  • 4 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • A pinch of salt
  • 2 tbsp carrot, grated
  • 1/2 tbsp pecans, chopped
  • 1/2 tbsp raisins (optional)

Topping options

  • Pecans, chopped
  • Yogurt
  • A pinch of nutmeg

Instructions

1. Put oil, milk, egg, sugar, and vanilla in a large mug. Use a whisk to mix until combined.
2. Add the flour, baking powder, nutmeg, cinnamon, and salt. Whisk until the mixture is smooth.
3. Fold in the grated carrot, pecans, and optional raisins.
4. Microwave on high for 2 1/2 minutes. Important: All microwaves are different, so cooking times may vary. Once cooked, leave the cake to cool completely.
5. Add your preferred toppings and enjoy.
