Double lemon cake in a mug

Making this moist, chewy citrus cake is effortless and the perfect match for a cup of herbal tea on a sunny morning. The zingy, sweet tang of lemon in this cake will have you appreciating the flavours of the season.

Cake

  • 3 tbsp all-purpose flour
  • 1⁄4 tsp baking powder
  • 1⁄8 tsp salt
  • 3 tbsp white sugar
  • 1 large egg
  • 2 tbsp vegetable oil
  • 1 1⁄2 tbsp freshly squeezed lemon juice
  • 1 tsp finely grated lemon zest (or 1/8 tsp lemon extract)

Icing

  • 1⁄3 cup icing sugar
  • 1 1⁄2 tsp freshly squeezed lemon juice

Instructions

Cake
1. Combine the flour, baking powder, and salt in a large mug.
2. Put the sugar, oil, lemon juice, and lemon zest in a small bowl and thoroughly blend with a fork. Pour the mixture into the mug.
3. Microwave on high for 90-120 seconds or until the cake rises and the centre is just set. Important: All microwaves are different, so cooking times may vary.
4. Leave in the mug to cool slightly before icing.
Icing
1. Mix the icing sugar and lemon juice in a small bowl until smooth.
2. Drizzle over cake.
