Blueberry muffin in a mug

Make the most of blueberry season with this delicious blueberry muffin in a mug. There’s no need to spend hours baking – simply mix some basic ingredients in a mug and microwave two minutes for a fresh, warm muffin. Choose a mug with straight sides for this recipe to ensure even cooking.



  • 1/4 cup + 2 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 2 tbsp sugar
  • 1/4 cup milk, room temperature
  • 1/2 tsp vanilla extract
  • 2 tbsp butter, melted and cooled
  • 1/4 cup fresh blueberries


1. Whisk the flour, baking powder, and sugar in a small bowl until completely combined.
2. Continue whisking as you add the milk, vanilla, and butter. Continue whisking until the batter is smooth.
3. Stir in the blueberries and pour the batter into a large mug.
4. Microwave on high for 90-120 seconds immediately to avoid the blueberries sinking to the bottom. Important: All microwaves are different, so cooking times may vary.

This mug cake is a great way to enjoy excess fresh blueberries. Whip it up for a quick and easy afternoon snack when you are short on time. For added texture, sprinkle the muffin with shaved almonds.
