A sunny picnic in the garden is never complete without cake. And if you’re short on time, here is the solution. Ready in just minutes, this fluffy cinnamon roll mug cake is out of this world.

Ingredients

Cake:

• 2 tbsp apple sauce
• 1 tbsp vegetable oil
• 1 tbsp buttermilk
• 1/4 tsp vanilla extract
• 1/4 cup + 1 tbsp all-purpose flour
• 2 1/2 tbsp light brown sugar, packed
• 3/4 tsp ground cinnamon
• 1/4 tsp baking powder
• 1/8 tsp salt
• 1 dash ground nutmeg (optional)

Cream Cheese Icing:

• 1 tbsp cream cheese
• 2 tbsp icing sugar
• 1 tsp milk

Instructions

1. Combine the cream cheese ingredients in a small bowl. Whisk until smooth and set aside.
2. Combine all the cake ingredients in a large mug then whisk until the mixture nearly smooth.
3. Microwave on high for 1 minute. Important: All microwaves are different, so cooking times may vary. If the cake is not cooked, microwave for an additional 15 seconds.
4. Spoon or pipe the icing on top. Serve warm.
