Chicken and leek casserole

Warm-up from the inside out with a hearty chicken casserole. This easy recipe

features a savoury sauce using everyday ingredients that is poured over chicken

thighs and baked. Simple, rustic, hearty comfort food.


6 chicken thighs, quartered

4 bacon rashers, roughly chopped

50 g butter

2 leeks, chopped

1 onion, finely chopped

1 tbsp fresh thyme (or 1tsp of dried thyme)

1 tbsp wholegrain mustard

3 tbsp flour

2 cups chicken stock, hot

Salt and pepper, to taste


1. Preheat oven to 180⁰

2. Place the chicken and bacon in a casserole dish and set aside.

3. Melt the butter in a large frying pan and add the leeks, onion, thyme, and mustard. Cook on medium heat until the onion and leeks are softened. Thoroughly stir in the flour and slowly add hot stock until sauce thickens. Season with salt and pepper to taste

4. Place the chicken and bacon in a casserole dish and pour the sauce over
top. Cover the dish and cook for 1 hour.

Serve with crusty bread to mop up the tasty sauce.
