A tasty, comforting dessert, these sweet and spiced bananas serve 6 and can be cooked over the embers of a campfire or on a BBQ.
INGREDIENTS
2 tsp golden syrup
50g butter, softened
40g unrefined brown sugar
2 tbsp spiced rum
6 bananas, unpeeled
Ice cream or frozen yoghurt, to garnish
METHOD
Mix the golden syrup with the sugar and butter, then add rum.
Cut a split along the inside curve of each banana skin without cutting all the way through.
Spread a spoonful of the golden syrup mixture inside each banana skin.
Completely seal each banana in foil and position them in the campfire embers or on a low BBQ heat for 15 minutes. Make sure that the bananas are curved-side up so that the golden syrup mixture does not leak out of the skin as it melts. Turn once.
When the bananas are caramelised, take them off the heat and serve immediately.
Serve with a single scoop of ice cream or frozen yoghurt.
