Satay Pork Stir Fry

Serves: 2-4

This flavourful meal is perfect year-round. Whip it up when you need a fast, simple fix for dinner. Stir fry dishes can be adapted to a range of tastes and palates, so get ready for this recipe – and varia-tions of – to become a family favourite. Our satay pork stir fry utilises leftover satay sauce.


Ingredients

2 tbsp cooking oil

400g pork steaks, thinly sliced

1 red onion, finely diced

2 cloves garlic, finely chopped

1 tsp fresh ginger, grated

500g frozen stir fry vegetables (alternative: fresh vegetables, just add water as required)

3 tbsp soy sauce

½ cup roasted peanuts, roughly chopped, to serve


Satay Sauce
Leftover satay sauce is the perfect stir fry sauce for this pork dish.

Method
1. Heat the oil in a large frying pan or wok. Add the pork and stir fry for 5 minutes over high          heat until browned. Set aside.
2. In the same pan, add the onion, garlic, and ginger. Stir fry for 2 minutes until the onion is          lightly browned.
3. Add the vegetables, soy sauce, and your preferred quantity of leftover satay sauce to the        pan. Stir fry for 5 minutes.
4. Return the pork to the pan, combine while stir-frying for another 2 minutes.
5. Serve immediately with the chopped roasted peanuts scattered over the top.

To ensure that your vegetables are cooking well during the stir fry add a splash of water to help cook them through. This dish also works well with chicken or beef. It’s adaptable to what you have on hand and what you’re feeling like that day.
