Brown rice with edamame and pineapple in a mug

Hearty and flavourful, this recipe is your answer to a simple dinner for one. After a busy day or week, pop this mug filled with goodness in the microwave and dinner will soon be done.


  • 1/2 cup instant brown rice
  • 2/3 cup water
  • 1/3 cup frozen shelled edamame
  • 1 tbsp teriyaki sauce
  • 1/4 cup diced fresh pineapple (or drained from a can)
  • 2 tbsp chopped cashews


1. Combine the rice and water in a large mug and place the edamame on top.
2. Cover with a small plate and microwave on high for 5-6 minutes (or until most of the water has been absorbed). Important: All microwaves are different, so cooking times may vary.
3. Set aside for 1 minute as the remaining water is absorbed.
4. Add the teriyaki sauce and pineapple and combine. Microwave uncovered on high for 30-45 seconds until pineapple is heated through.
5. Let the mug cool for 30 seconds then sprinkle the cashews.
