ANZAC cake in a mug

Fill April with the warm scent of coconut, golden syrup, and oats. This recipe serves up a soft, gooey, delicious cake version of the classic ANZAC biscuit. It only takes a few minutes, so boil the kettle for your cup of tea before you begin.

Ingredients

  • 1 tbsp of golden or maple syrup
  • 1/2 tbsp butter, melted
  • 1/2 cup of quick oats
  • 1/4 tsp baking powder
  • 3 tbsp milk
  • 1/4 tsp salt
  • 1 tbsp shredded coconut
  • Pinch cinnamon (optional)

Instructions
1. Mix the syrup and butter in your favourite large mug.
2. Add oats, baking powder, milk, and an optional cinnamon pinch to the mug. If the mixture is looking too dry add 1tsp water. Stir well.
3. Microwave on high for 2 minutes. Disclaimer: All microwaves are different so cooking times may vary.
