Discover easy-to-bake, delicious muffins from Ryman’s Food Services Chef, Matt Orr. They’re perfect with your morning coffee or afternoon cuppa, and our favourite new addition to our assisted living winter menu.
Follow Matt’s simple steps to make these mouth watering muffins at home, or stop by one of our popular onsite village cafés for a barista coffee and a delicious treat.
Ingredients
- 2 cups self-raising flour
- 1/2 cup caster sugar
- 3/4 cup milk
- 125 grams butter, melted and slightly cooled
- 2 eggs
- 1 teaspoon vanilla extract
- 120 grams Barker’s Dulce de Leche Milk Caramel Spread
Method
- Preheat your oven to 180°C.
- Lightly grease a 12-hole muffin tin or line it with paper patty cases.
- Sift flour and sugar into a large bowl.
- In a large jug, whisk milk, butter, eggs and vanilla together.
- Make a well in centre of dry ingredients, then add the milk mixture all at once.
- Mix lightly, until just combined. Be careful not to over-mix.
- Divide half of the mixture among recesses.
- Place a small spoonful of Barker’s Dulce de Leche Milk Caramel Spread into the middle of the batter in the muffin tin.
- Divide the rest of the batter among the recesses.
- Bake at 180 degrees Celsius for approximately 16-18 minutes or until golden brown.
- Serve with a sprinkle of icing sugar and enjoy.
