Smoked salmon and dill frittata

This delicious yet simple dish is perfect for anyone that wants to whip up something tasty in minutes.

INGREDIENTS

Serving for one
1 tbsp olive oil
¼ cup finely diced onion
2 eggs
1 tbsp cream
2 tbsp grated cheese
1 tbsp chopped chives
100 gm Smoked salmon
1 tsp chopped dill
Salt and Pepper

Serving for two
2 tbsp olive oil
½ cup finely diced onion
4 eggs
2 tbsp cream
4 tbsp grated cheese
2 tbsp chopped chives
200gm Smoked salmon
2 tsp chopped dill
Salt and Pepper

METHOD

Method
1. Preheat a non-stick frying pan and add the olive oil and sauté the diced onion till
translucent
2. Add the eggs and cream into a bowl and whisk thoroughly,
then add the smoked salmon, dill, salt and pepper. Stir all ingredients together with a spoon.
3. Pour the egg mixture into a greased ovenproof dish and top with
cheddar cheese
4. Bake in a pre-heated oven at 160c for approximately 20-30 mins or until cooked
through.
Serve with a simple green salad and chutney.
